This healthy pancake recipe only uses two ingredients. They're quick to make and taste delicious, with no added sugar but lots of protein and vitamins. The best way to start your day! Bananas are known for giving you energy and improving your mood - egg whites are a high source of protein and egg yolks are a great source of vitamins and iron. I eat mine with chopped strawberries and a small splash of maple syrup but you can forget about the syrup if you prefer a super healthy breakfast. Blueberries, natural yoghurt or raspberries all make yummy toppings. If you're trying to find a healthier dessert you could try these with a drizzle of dark chocolate and shredded coconut.
YOU WILL NEED
1 Ripe Banana
Mash the banana up with a fork. Whisk the eggs in a measuring jug (for easier pouring) and then combine the two ingredients. Mix together well.
Heat up a frying pan with a little bit of oil (coconut oil is a healthy option) on a medium heat - then pour a small amount of the mixture into the pan until it spreads out to a CD size disc. Cook for 30 seconds or until golden brown and then flip the pancake over for further 30 seconds.
This recipe should make three small pancakes. Pile high with toppings of your choice and enjoy!
