Simple Jammy Biscuits in 25 mins

Feeling peckish? 

Whenever I crave something sugary sweet but not all too bad for me I bake my own jammy biscuits. They only take 10 minutes to prepare and 15 minutes to bake in the oven. They're deliciously easy and only 170 calories each!

You will need:
200g self raising flour
100g caster sugar
100g margarine
1 egg, lightly beaten
4 tablespoons of your favourite jam
(I'm using my Mum's home-made Apple and Fig Jam!)

1. Pre heat your ovens to Gas Mark 5, 190 C or Fan 170 C
2. Rub the flour, butter and sugar together to form breadcrumbs between your fingers.
3. Add just enough egg to bring the mixture together to form a stiff dough
4. Grab a small ball of dough, roll it in your palms before dropping on to a baking sheet on a tray
5. Space them out so they won't touch when baking! You will probably end up with about 12 blobs.
6. Push a finger into the centre of each one to make a small indentation for the jam to sit. 
7. Drop a teaspoon of jam into the centre of each dough ball
8. Bake for 10-15mins in the oven until slightly golden and cool on a wire rack.
9. Eat warm if you can't wait any longer! 


I made 13 in all different sizes (rustic) and they were completely gone in 2 days! My family loved them and they reminded me of the jam biscuits we used to have in Primary School!
