Blackcurrant Mini Muffins Recipe

I made these blackcurrant muffins the other day and they have gone down a treat with my family! This recipe makes 12 and after 2 days they were all gone! They make great treats but can also be fantastic desserts if flipped upside down and covered in custard or cream.

You can substitute the blackcurrants for blueberries but I quite like the unusual blackcurrant version. I call them my Ribena Muffins!



What you will need:

150g Plain Flour
150g Butter
150g Caster Sugar
3 eggs
2 teaspoons baking powder
1 teaspoon vanilla extract 
1 teaspoon ground cinnamon
100g Blackcurrants



  • I washed and dried my blackcurrants thoroughly. Make sure they are fairly dry before you add them to the mixture.
  • Set your oven to Gas Mark 4 or equivalent. 
  • Cream together the butter and sugar until smooth and light in colour
  • Slowly add in the flour and baking powder to the mixture, mix well
  • Slowly add the eggs, mix well
  • Add the vanilla extract, cinnamon and mix well
  • Carefully add the blackcurrants and stir gently without squashing the blackcurrants




  • But the mixture into bun cases, filling them almost to the top
  • The raising agent will make the muffins rise and overflow their bun cases but this is ok!




  • Bake for 30 minutes on the middle shelf of your oven at Gas Mark 4.
  • Check on the muffins now and again but do not open the oven door unless necessary 
  • They are ready once they are golden brown on top and springy to the touch!



Peel off the bun case once cool and serve as a upside down berry cake (with cream or custard)
Or just as a mini muffin snack!

    @Krissy - the cinnamon is optional :) Although I found I couldn't really taste it all that much anyway! Hope you have fun making these!
